かき氷 — Kakigori, and why the machine matters
Kakigori is Japanese shaved ice, and texture is everything: not the wet shards of a blender but a light, dry, snow-like fluff that drinks up syrup and dissolves on the tongue. That comes from a sharp blade shaving fine ribbons off the ice at a controlled angle, which is what a Swan does. Swan is the classic name in Japanese ice shavers, and this compact, hand-cranked model brings that same snow-fine result, and a bit of retro counter theatre, to sites that don't have room, or need, for the large floor machine.

How is this different from the large Swan?
Size and flexibility. The large SI-3B has a bigger 216mm disc and higher output for serious volume, but runs on block ice only and is a sizeable floor machine. This compact has a 120mm disc, fits on a counter, and crucially takes both block and cubed ice, and it arrives with cups, a scoop and a rose ice holder. For most cafés and restaurants, the compact is the practical choice; choose the large only if kakigori volume demands it.

Can it use cubed ice?
Yes. Unlike the large block-only model, this compact takes both block and cubed ice, which makes it far more practical for a kitchen that already has a standard ice machine. Block ice still gives the finest, driest snow, but the ability to run on cubes means you can make kakigori without sourcing special ice.
What is included?
It comes ready to serve: a water tray, two ice cups, a scoop and a rose ice holder, the part that shapes the ice for a neat, rounded mound. So you have what you need to start making and presenting kakigori out of the box.
How do I maintain it?
The blade is rust-resistant stainless steel; keep the machine clean and dry between uses. Sharpness is what gives fine snow, and the blade is replaceable, so most performance issues are solved by fitting a fresh blade. Spare blades are available separately.
